Meatball Soup for the Slow Cooker

Long time no post..eh? Almost 2 years 😲


Life has changed a LOT, I started my own business that has taken most of my time and we added a little girl to our family. Clara Ann is 7 months old now and a wonderful caboose for our family!!

The boys are well, Cooper is almost 7 and Luke is almost 3. They get along, sometimes...but you all know how that goes.


I'm excited to start sharing recipes again!

First off:

Meatball Soup for the Slow Cooker

This was a big hit and really easy. You can use baby carrots or chop up your own, we had a nice bag of rainbow carrots I added to ours. Green beans, use frozen or fresh. Any meatball you want, I had a bag of Ikea chicken ones we picked up on our last trip there.




Meatball Soup for the Slow Cooker

1 pound frozen meatballs, any type of meat but either plain or Italian seasoned. 
1 bag fresh or frozen green beans, ends snapped off if fresh
2 cups baby carrots or roughly chopped fresh carrots
1 can Italian diced tomatoes
2 cloves garlic, diced
2 tablespoons dried minced onions
3 - 4 cups chicken broth
Salt and Pepper to taste

Combine all in slow cooker and cook on low 6 hours, or high 4. 

Serve with bread and butter!
